One of Aussie kids all-time favourite buns.
They are light, airy and very tasty.
Ingredients
Bread flour 400g
Plain flour 100g
Instant dry yeast 6g
Castor sugar 60g ( this is just right, not overly sweet)
Salt 1 teaspoon
Milk powder 20g
Beaten egg 50g
Lukewarm water 260g
Unsalted butter (softened) 50g
Filling
Bacon 175g ( cut into small pieces)
Grated cheddar cheese 120g
divide into 10 even portions, roll them into balls, let gluten rest for 10 minutes.

flatten dough slightly, spread bacon and cheese on top, take another rise for an hour, or until the size doubled.

Method ( bread machine)
Lukewarm water and beaten egg goes in the container first. Sugar on one side while salt on the other.
Milk powder, flours and yeast goes next. Set "dough" mode, press "start". When everything comes into a rough dough, add in the unsalted butter. Let the machine do the rest of the kneading job for you for now.
When completion, remove and transfer dough to the floured working surface, punch down air, cover and let it rest for 10 minutes.
Divide into 10 equal portions, roll them into balls, lay them on the baking tray with parchment paper. Let it rest again for 10 minutes.
Flatten each dough slightly, top with bacon and cheese. Cover and take another rise for one hour, until it has doubled its size.
Bake at preheated oven of 180C for 15 minutes, or until it turns slightly browned. Test with a skewer, if it comes out clean, it is done ( every oven varies, I had it slightly longer).
Note: Fill a metal pan with boiling water on the bottom shelf of the oven during baking.
