Blueberry Pikelets
Serve hot with honey or maple syrup...

Ingredients
1 cup self-raising flour
2 tablespoons caster sugar
20g butter, melted
1 teaspoon vanilla essence
3/4 cup milk
150g fresh blueberries
Methods
In a bowl, sift the flour and stir in the sugar. Make a well in the centre of the the mixture.
In a jug, whisk in the egg, butter, vanilla and milk until just combined (do not overmix).
Stir in the blueberries.
Heat up a pan, brush lightly with oil or melted butter, pour tablespoonful of the batter into the pan, when bubbles appearing on the surface, turn over to the other side and cook until lightly browned.
Serve hot with maple syrup or honey.
