Recipe from here
Ingredients (750g loaf)
Bread flour 350g
Instant dry yeast 4g
Castor sugar 56g
Salt 4g
Milk powder 14g
Beaten egg 35g
Lukewarm water 189g
Unsalted butter 35g
sweetened red bean paste ( use appropriately)- I used homemade paste here. This is the way I like it, not too smooth as to give it a little more texture. It's really up to you how you want it.
spread red bean paste generously |
make a slit in the centre, not the two sides or the bottom end |
open up the slit dough, twist into shape, tuck two ends under, drop back into the bread machine pan, attach back to the machine, cover with wet cloth, let it rise for an hour. |
Method (Bread Machine)
1. Water, sugar, salt and beaten egg goes in the container first. Flour and yeast comes in last. Set "Dough" mode, and press "Start". When everything comes into a rough dough form, add in the unsalted butter.
Now, let the machine do the rest of the job for you.
2. When the kneading is done, transfer dough to the floured working surface. Punch down air, roll into a ball. Let it rest for 15 minutes.
3. Roll into a rectangle sheet, turn to the opposite side, spread out the red bean paste, roll it up (towards you)like the way you would do to a swiss roll.
4. Make a slit in the centre ( do not cut the two sides and the bottom part, see picture below), twist into shape, tuck in the two ends at the bottom, drop back into the bread machine container ( no paddle is used here), wrap with a piece of wet cloth, let it rise for one hour.
5. Now, remove the wet cloth, set mode "Bake" for one hour and press "Start" and let it start baking on its own now.
6. When it is done, remove the bread out of the container and transfer to cool in wire rack.
