Steel Cut Oatmeal Honey Bread

Another healthy bread here. Steel cut oats.
It has nutty, interesting chew in your bites. Use your favourite honey would definitely pleases you in the result.



This bread is more appropriate as sandwich bread rather than toasted bread which gives you this gummy feel.

Ingredients (slight modifications)
1 and 1/2 cup boiling water
1 cup rolled or steel-cut oats
1/2 cup honey
1/4 cup butter ( 4 tablespoons)
1 tablespoon Salt


1 tablespoon instant dry yeast
1/2 cup warm water
1 teaspoon honey
2 cups whole wheat flour
3 and 1/2 - 4 and 1/2 cup unbleached all-purpose flour ( I had 2 cups whole wheat and, 1 1/2 cup bread flour for this)
soaked overnight 

well-risen dough 
roll and seal it up
let it rise in the loaf pan, ready to get baked now


Methods( with modifications)
Mix the first five ingredients and let it cool to room temperature. ( I had my steel oats soaked in just enough water in the fridge overnight before, drained and proceed all steps here).
Dissolve the yeast in the warm water along with the honey, let it turns frothy.
Gradually add the rest of the ingredients in, knead until the dough become smooth and glossy.
Cover and let it rise for an hour.
Punch down air, cover and let it rise for another hour. This will help to produce lighter bread.
Punch down air again, divide into two portions to fit into your loaf pan, let it rise to the top for about 45 minutes.
By the last 15 minutes, put the loaves into a cold oven and turn oven to 200C (400F) for 15 minutes.
Lower to 180C (375F) after 15 minutes nd bake for further 25 minutes.
