Dark brown sugar pumpkin mantou
A small batch of Mantou for my Shanghainese neighour again, just good for their breakfast.
Ingredients
Pumpkin mash 120g
Milk 30-50g
Plain flour 250g
Dry yeast 2g
Dark brown sugar 4 tablespoons ( to your taste)
Method
Whisk and dissolve yeast with the lukewarm milk, it will become frothy very quickly. Stir and mix all ingredients into a rough dough. Cover and leave for 10 minutes. Gentle knead for 10 seconds and leave for 10 minutes. Do twice more for the 10 minute interval. Cover and let it rise in a warm area until the size is doubled.
Set up steamer. Steam on high heat, rapidly on boiling water, for 15 minutes.
Turn off heat. Remove buns out only after 5 minutes later.
