Chicken steamed buns



Soft and fluffy buns
It  is handy to have pre-mixed Steamed bun flour, you can easily get buns done in a short time.  You can get it at any Asian grocery shop here, it's definitely a popular product here among Chinese ladies who loves to DIY steamed buns at home.





Steamed buns cake flour



Here are the steps involved:
                                       

Divide dough  into 12 parts 

Roll each into a ball, rest 10 minutes.

Roll each into small, flat, circular sheet. Place filling in and fold.

Ingredients ( dough):

Steamed buns cake flour ( Bao flour)
 Milk   255ml
Sugar  100g
Oil  1 tablespoon
12 square pieces of proof paper


note: baking powder, bicarbonate of soda not necessay to add in as it is part of the flour base.


Mix all filling ingredients with chicken mince 


Ingredients ( filling):

1.  Cilantro, chopped
2.  1 carrot, chopped
3.  Corn starch  1 tablespoon
4.  Sugar 1 tablespoon
5.  Salt  1 teaspoon
6.  Chicken powder  1/2 teaspoon
7.  Fish sauce  1 teaspoon
8.  White pepper
9.  Chicken mince 500g




Method ( I used food processor):

1.  Flour and sugar goes in the food processor.
2.  " Pulse" 2 to 3 times as you pour in the oil.
3.  Gradually pour in milk as you "pause" and, as soon as dough comes together, stop machine running right away.
note: over mixed is not good.
4.  Scrape dough out onto a bowl, wrap it with cling wrap, let it rise for 30 minutes, that will do.
5.  Divide into 12 parts, roll each into ball shape and let it rest for 10 minutes.
6.  Now, roll each into small, flat, circular sheet. Place filling in the centre and fold it.
7.  Place each bun on square proof paper, organize them in the steam pan.
8. Set up steamer. Add 2 tablespoon of vinegar into the water, this way is to whiten the buns.
9. On high heat at boiling water, steam all the buns for 10 minutes.
10. Lift off the cover and let buns continue to steam for further 10 minutes. This way is to remove  any condensation water.
11. Remove buns from the steamer after that. Buns are now hot, delicious and ready to eat!
