Almond biscotti

I love biscotti, any kind.  It is always good to go with coffee. Absolutely free from guilt as it's only egg white and no butter..
What do you think? :)







Here's the recipe: ( from No frills recipes)

 3 egg whites
 120g plain flour , sifted.
 90g castor sugar
 120g unblanched whole almonds


Methods:

1.    Preheat oven 180 deg.C
2.    Whisk egg whites until foamy, add in sugar and whisk until it's stiff but not dry.
3.    Add in sifted flour, mix well.  Now add whole almonds.  It should be soft and light now.
4.    Pour mixture onto greased dish, 15cm x 8cm.
5.    Bake for 30 mins or until light brown.
6.    Let it cool.  Wrap in foil and safe in fridge for a day or two.
7.    Slice it thin using serrated knife, bake in 130 deg for 45 minutes or until crispy and crunchy.
8.    Store in air-tight jar once it is completely cooled.
