Chocolate Custard Muffin ( Dan Lepard)



                                                  Interesting texture,  tasted so good!




Recipe from here ( Dan Lepard, The Guardian)
Ingredients
50g cornflour
3 level tbsp cocoa
100g dark brown sugar ( I reduced to 80g)
225ml cold water
75g unsalted butter, cubed
125g dark chocolate, broken small
75ml sunflower oil
2 tsp vanilla extract
2 large eggs
125g caster sugar ( I used 100g raw castor sugar)
125g plain flour
2 and 1/2 tsp baking powder






Methods
In a saucepan, add in the cornflour, cocoa, brown sugar and water. Over medium heat, whisk until boiling, mixture should become very thick and smooth.
Remove form heat, beat in the butter and chocolate until melted and absorbed.
Next, add the oil, vanilla and one of the eggs, beat until combined.
Add the remaining egg and the castor sugar, beat until smooth and thick.

Flour and baking powder goes into a bowl, stir, sift directly onto the custard. Beat to combined.
Spoon into a 12 muffin cups ( I used 6 large muffin cups).
Bake at 180C for 25 minutes.
