Baked meatballs and Pasta




Another simple dinner for us here.  This is actually quite a healthy light meal too. If you love meatballs, this is the one for you.

Ingredients:

100g macaroni
500g beef mince
1 onion, finely chopped
2 tablespoons grated Parmesan
1 tablespoon chopped fresh basil
1 egg beaten
1 cup fresh breadcrumbs
2 tablespoons olive oil
1 cup grated mozzarella








Sauce:
1 onion, sliced
1 clove garlic, crushed
1 capsicum, seeded and sliced
125g mushrooms, sliced
3 tablespoons tomato paste
1/2 cup red wine




                                               
                                                                       Ready to be baked.




Method:

1. Cook the pasta in a large pan of rapidly boiling salted water until al dente. Drain well and return to the pan to keep warm. Mix together the mince, onion, Parmesan, basil , egg and half the breadcrumbs. Form heaped teaspoon of the mixture into balls.

2. Heat the oil in the frying pan and cook the meatballs until well combined. Drain on the paper towels. Transfer to n ovenproof dish. Pre-heat oven to moderate 180 deg.

3. To make the sauce, add the onion and garlic to the same pan and stir over low heat until tender. Add capsicum and mushrooms and cook for 2 minutes. Stir in tomato paste.

4. Add 1 cup (250ml) of water and the wine and bring to the boil. Mix in the macaroni and salt and pepper. Pour over the meatballs.

5. Bake for 30- 35 minutes. Sprinkle with mozzarella cheese and remaining breadcrumbs.

6. Bake for anothe 10 minutes or until golden.
