Smoked Salmon Pasta




This is a super easy delicious meal for my busy nights dinners.  Tried and tasted to rave reviews from the family. 10 minutes preparation and 15 minutes cooking time!  It is enough to serve 4 of us in the family.  Done!



Ingredients:

500g  pasta
1 tablespoon olive oil
4 spring onion, finely chopped ( I replaced with spinach)
180g button mushroom, sliced
1 cup ( 250 ml) dry white wine
300ml cream
1 tablespoon lemon juice
90g Parmesan, grated ( I used less, it's up to you)
200g smoked salmon, cut into strips




Method:
1.  Cook the pasta in boiling salted water until al dente.  Drain and keep warm.

2.  Heat oil in saucepan, add in spring onion and mushrooms. Cook on medium heat for 1-2 minutes, or until soft.

3. Add the wine and cream and bring to boil. Reduce the heat and simmer for 1 minute.

4. Pour mushroom sauce over the pasta and stir through with lemon juice. Add in Smoked Salmon, Parmesan and stir until warmed through.

5.  Remove from the heat and stir in the smoked salmon.  Season with pepper and serve with Parmesan shavings.
