Dan Lepard's Bay Custart Tart ( Dan Lepard)


Very delicious tart, infused with bay leaves. The recipe uses a deep muffin tray which delivers eight tarts. Please refer to original link for instructions.
For mine, I made it into four tarts on four pie dish of  3.5cm deep, 7.5cm round (base) pie tins. With a litte extra crust I made two mini jam tarts.

Avocado Prawn Savoury Pie


This is my second homemade pie after the Curry Chicken Pie.  Another wonderful experience, I found myself completing the pie much faster than before.  Here, I needed to blind bake the crust twice to 80% cooked before filling the ingredients.
It is such a delicious pie, glad that I bought this book, I can learn even more pie recipes here.

Spiced apple parcels



Whenever we go to Macdonalds, my daughter would also order an apple pie to go with her BigMac meal.  She just love it so much.  In fact, while eating this homemade one, she was already requesting another version of Apple pie already.:)







They are actually not as sweet, my kids just kept eating one after another last night for supper. They had it with ice cream too, really good.



cooked apple mixes with toasted almond

Fold it over

Seal it with a fork

Egg wash and make 3 slits each

Done!

Ingredients:

50g butter
3 medium apples (450g), peeled, cored and chopped finely
2 tablespoon maple syrup
1 tablespoons castor sugar
1/2 teaspoon mixed spice  ( I used 1/4 teaspoon cinnamon powder and, 1/4 teaspoon nutmeg powder)
1/4 cup  ( 40g)sultanas  ( I didn't include these to adjust to my son's taste)
1/4 cup silvered almonds, toasted
1 and 1/2 sheets butter puff pastry
1 egg, lightly beaten

Puff pastry, 1 and 1/2 sheet






Method:

1.  Melt butter in a pan, cook apple, stirring occasionally, about 5 minutes or until browned lightly.
2.  Add in sugar, spice and  maple syrup; cook, stirring about 5 minutes or until liquic boils and caramelises.  Transfer to a bowl and let it cool.
3.  Meanwhile, pre-heated oven to 220C/ 425F.
4.  Cut whole pastry sheet in quarters; cut half sheet in half. Spoon 1/4 cup apple mixture along one half of the pastry squares. Fold over to form rectangles,   Spoon out mixture, fold over and seal with a fork.
5. Egg wash, make  3 slits each.
6. Bake about 20 minutes or until browned.

Serving suggestion:
Dust with sifted icing sugar and serve with ice cream.

Homemade beef sausage roll




             Homemade sausage rolls are very healthy, simple to make and you just love it.  It tasted nothing like the store bought ones.  Very homemade.  It is definitely a keeper for my family.

Ingredients:

300g beef mince
1 small brown onion, finely chopped
1 carrot, peeled, grated
1 egg, lightly beaten
1 tablespoon flat parsley leaves, chopped
1/2 teaspoon dried mixed herbs
1/2 teaspoon ground black pepper
2 sheets frozen puff pastry, partially thawed
1 tablespoon milk
tomato sauce, to serve

                                             Combine everything and get it processed.
       


                                           Lay mince mixture this way, in the middle of the sheet.





                                             Roll it up and make sure the seam side down.





                        Slice each roll into four pieces, I made some longer ones to add some variety.




Method:


1. Pre-heat oveb to 220c. Line a baking tray with baking paper.
2. Combine mince, onion, carrot, egg, parsley, dried herbs and pepper and processed. Cut pastry sheets in half.
3. Shape one quarter of the mince micture into a sausage and place along 1 long edge of pastry. Roll up pastry to enclose mince mixture. Cut roll into 4. Place, seam side down, on prepared tray. Repeat with remaining mince mixture and pastry.
4. Brush sausage roll tops with milk. Bake for 20 to 25 minutes or until golden brown and puffed.
5. Allow to cool on tray for 5 minutes.
6. Serve hot with tomato sauce.






                                                   Great as snack, or light lunch.
